Ingredients: 6 cups of boiling water 1 lb of elbow macaroni 1 1/2 lbs sharp cheese 1/2 stick margarine 2 1/2 cups whole milk 2 tbls flour 1 tbls corn starch 1/2 tbls dry mustard 1 tbls lawry's season salt 1 tsp salt 1 tsp pepper 2 tbls paprika 1 cup of seasoned bread crumbs

Directions:Preheat oven 350 In a casserole pan spray the bottom and sides with Pam or Non-stick cooking oil Boil macaroni in boiling water add tbls of salt. Cook for 30 minutes or until macaroni is tender. Drain in a collender. Place drained cooked macaroni in casserole dish set aside.
Grate cheese
In a sauce pan over medium heat melt margarine do not let it burn. Slowly stir in flour until a pasty consistentcy. Continue stirring, if needed add more margarine and corn starch, dry mustard and season salt. Slowly add milk using a wisk. Make sure to stir rapidly and do not allow the mix to get lumpy. Cook for about 10 minutes until all milk has been added and the contents thicken. Slowly add 3/4 cups of shredded cheddar cheese. Continue to stir until contents thickens and turns yellow. Remove from heat. Slowly sprinkle a little cheddar cheese intermittantly into the macaroni. Add cheese sauce until the macaroni is entirely covered. Make sure that the cheese sauce is throughly mixed with macaroni. Sprinkle remaining shredded cheese over entire macaroni. Cover cheese with bread crumbs. Sprinkle paprika. Place dish in the second rack of the oven in the middle. Bake for 40-45 minutes until contents is a golden brown. Remove from oven and let cool for 5-10 minutes. |

Notes: For the health conscious replace macaroni with whole wheat macaroni or you can mix half and half. Also can use reduced fat cheddar cheese to reduce calories. May substitute for 1 or 2 percent milk for whole milk. Can also add approximately 1 to 2 tbls of yellow mustard to cheese sauce for color.
