About 2 pounds of fresh string beans, pole beans, if possible
A piece or two of bacon, cut up
3 chicken or beef bouillon cubes
Freshly ground black pepper, to taste (Mattie used several healthy grinds)
Boiling water to cover beans

Directions:
Wash, tip and string beans. Leave them whole. Add the bacon, pepper and bouillon cubes to the water and bring to a boil. Plunge the beans into boiling water - just enough water to cover them. Cook, uncovered, until done. They should still have some crispness left. (15 to 20 minutes at most) Serve at once.

Mattie Jefferson worked for us when we lived on West Avenue and Byrnes Road in North Augusta. One of her greatest "words of wisdom" after her son and his family, visiting from Washington State left for home, was: "I don't know whether I'm happier to see my grands (grandchildren and their parents) come, or I'm happier to see them go home."
