Ingredients:  
1 c. grated yellow squash
2 eggs
onion to taste approximately ¼ cup
1/3 – ½ c stuffing mix
salt pepper to taste

Directions:
Directions:
Mix all ingredients and fry in skillet w/small amount of cooking or olive oil. Can form into mounds or patties and try to flip or just stir like scrambled eggs.

Variation:
If you don’t have stuffing mix use crackers crumbs with a little sage
