1 onion, diced
1 green pepper, diced
garlic, minced - to taste
2 lbs. ground beef
1 can Rotel tomatoes, with juice
1 can pinto beans, with juice
1 can chicken broth (or more as desired)
1 can black beans, with juice
1 can whole corn, with juice
1 can hominy. with juice
1 envelope taco seasoning
1 envelope Hidden Valley Ranch seasoning
Sliced Avocados for serving

Directions:

Brown meat, onions, green pepper and garlic until cooked
Drain off fat
Add all the cans with juice and seasoning packets
Cook for 45 minutes to 1 hour.

*add more chicken broth if not "soupy" enough

Serve with cornbread

This recipe can be doubled or even tripled. Be careful as it makes a lot of soup. You can also add/substitute different beans such as canelli or other types of beans This is a wonderful winter dinner.
