1/4 tsp. Kosher salt
pasta
2 lemons
6 medium canned artichokes
8 oz. bacon cut into 1-inch pieces
3 tbsp. evoo
6 garlic gloves, crushed (or more to taste)
1/2 tsp. red pepper flakes
1/3 cup fresh parsley
1 cup Romano cheese

Directions:
Directions:
Boil pasta el dente (keep pasta water)

Cook bacon in evoo with crushed garlic and cook until fat has rendered (approximately 5 minutes)

Add artichokes and lemon juice and red pepper flakes. Cover and let cook until chokes soften and carmelize (approximately 10 minutes)

Uncover and add 1 cup of pasta water and simmer for another 10 minutes

Add pasta to sauce and add 2 tbsp. of evoo and chopped parsley.

Stir

Remove and add to serving platter and sprinkle Romano cheese over top and serve
