1 whole chicken
4 stalks celery, chopped
1 large onion, chopped
3 garlic cloves, chopped
1 teaspoon whole allspice
1 teaspoon whole cloves
1/3 whole nutmeg
1 heaping teaspoon black peppercorns
Salt, to taste
1 (12-ounce) package of noodles (or dumplings) of your choice

Put chicken in large pot. Add enough water to cover chicken. Add celery, onion and garlic. Make a spice bag with cheesecloth or a coffee filter and put cloves, allspice, nutmeg and peppercorns in bag. Tie bag to close. Add spice bag to pot. Bring just to a boil, then reduce heat to a simmer and cook until chicken starts falling apart (about 1 1/2 hours). Remove spice bag and chicken, leaving vegetables in stock. Debone chicken. Chop chicken and add back to stock, and add salt to taste. Add noodles or dumplings and cook until tender.
