DOUGH:
5 cups flour
6 eggs (or one egg per cup of flour, plus one more)
1 Tbsp cooking oil
Pinch of salt

FILLING:
1/2 Cup cooked spinach (frozen works good, but squeeze out all liquid)
1 lb ground veal and lean ground pork or beef
2 eggs
1/4 cup seasoned breadcrumbs
1/2 Cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
2 teaspoons parsley
Salt and pepper to taste

Mix all ingredients with a fork
Kneed until combined
Cover with towel and let rest for 15 minutes
Run dough 2 times on each number on hand pasta machine
Roll to #3 on pasta machine
Fill, cut and fold
Place on floured board to set
Place on cookie sheets with flour and freeze until frozen
Transfer to sealed container when completely frozen and freeze until needed


FILLING:
Cook ground meat, add spinach, seasoning and mix
Add breadcrumbs and cheese
Remove from heat, let sit for a few minutes
Add and mix eggs
