1 teaspoon fennel seeds
1 tablespoon olive oil
1 head of red cabbage, thinly sliced
Sugar
2 tablespoons butter
red wine vinegar
chicken broth
Salt & pepper

Directions:
Directions:
Toast fennel seeds in a skillet with 1 tablespoon olive oil.
Add sliced red cabbage in batches, and season with salt and pepper.
Stir until cabbage is wilted
Add a pinch of sugar
Add a splash of red wine vinegar and chicken broth.
Partially cover and simmer over medium-low heat, stirring occasionally, until cabbage is soft, about 30 min.
Toss with 2 tablespoons of soften butter and a handful of fresh chopped parsley and serve.
