Place cookies on ungreased cookie sheet and bake at 350° for 10 – 15 minutes
or until firm. The cookies should not brown
Let cookies cool completely
While cookies are cooling make frosting

FROSTING:
In a large pot add sugar and water
Cook on medium until frothy.
Add lemon extract and anise extract
Continue cooking and whisking for 5 minutes
After frosting is frothy, carefully add half of the cookies to the pot and with a large wooden spoon and carefully mix cookies in frosting. When completely coated, remove cookies with a slotted spoon and place on a cotton dish towel. Be sure to place the towels on a wooden board to keep from ruining your counters. Let cookies dry completely (at least a couple hours). Once cookies are completely dry, they can be kept fresh in a tin.
