3–1 lb. bags cavatappi noodles
1 loaf velveeta (the big one)
1–8 oz. bag shredded sharp cheddar
2 c. cubed muenster cheese
2 c. milk
1/2 c. heavy cream
1–1/2 tbsp. Dijon mustard
1 stick butter
1 tsp. salt
2 tsp. black pepper
1 tsp. cayenne pepper
1 tsp. paprika

Sauce:
Cut Velveeta into cubes and place in deep skillet on medium heat. Pour in milk and cream. Add butter and all seasonings. Stir continuously to ensure sauce does not stick to the bottom. If too salty, add another 1/2 c. milk.

Pasta:
While sauce is heating, bring a large stockpot of salted water to a boil and pour in pasta. Cook until just al dente, then remove from heat and drain.

Stir sauce into drained pasta until coated. (A wooden spoon is best – Teflon doesn’t do the job well since it bends under the weight of all of the pasta and cheese) Fold in cubed muenster and 1/2 of the shredded cheddar and stir until pasta is creamy and gooey.

Pour into large serving dish, top with remaining shredded cheddar, and sprinkle some additional paprika on top. Serve immediately.
