1 large Granny Smith apple- peel, core, and slice thin
3 eggs-room temperature
1/2 c. milk
1/2 c. flour
1/4 tsp. vanilla
2 T. butter
1/4 c. brown sugar
1/4 tsp. cinnamon
lemon juice
powdered sugar

Directions:
Preheat oven to 450º, put rack in center of oven. Whisk together eggs, milk, flour and vanilla until smooth. Melt butter in 10" cast iron skillet or another ovenproof skillet over medium heat. Spread apples in pan and cook about 4 minutes, flip and cook 3 more. Sprinkle brown sugar and cinnamon over apples and cook until sugar begins to melt, stir to evenly coat. Remove from heat, pour batter over the top. Bake 15 minutes until it puffs up and turns golden brown. Cut into 4 wedges, sprinkle with lemon juice and powdered sugar.

I think I got this recipe from one of those magazines that come with the Sunday paper. This was often our First Day Back to School request. I would usually double it and bake it in a 9 x 13 pan. The lemon adds a lot, don't forget it.
