1 3/4 c. flour
1 1/2 tsp. baking soda
3/4 tsp. kosher salt
3 large eggs
1 1/2 c. sugar
1 c. mashed ripe bananas (about 2 large)
3/4 c. vegetable oil

Directions:
Directions:
Preheat oven to 350º. Coat a 9" x 5" x 3" loaf pan with nonstick spray or butter. Whisk flour, baking soda and salt in a medium bowl. Whisk eggs, bananas and oil in a large bowl until smooth. Add dry ingredients to banana mixture and stir just until combined. Scrape batter into pan and smooth top. Bake 60-70 minutes until a toothpick inserted into center comes out clean. Transfer to wire rack and let cool in pan for 15 minutes. Run knife around edge of pan to release the bread. Turn out onto rack and cool completely.
