1 Tbsp. olive oil
4 boneless skinless chicken breasts or thighs
Kosher salt
ground black pepper
1 tsp. or more dried oregano
3 Tbsp. butter (ghee)
4-5 cups baby spinach (I remove the stems but not necessary)
1-2 tsp. coconut aminos

Directions:
Directions:
Season chicken on both sides with salt, pepper and oregano. In a skillet over medium heat, heat oil. Add chicken and cook until golden and no longer pink, 8 minutes per side. Remove from skillet and set aside.
In the same skillet over medium heat, melt butter. Stir in garlic and cook until fragrant, about 1 minute.
Add chicken back and juices. Add spinach and cook until wilted. Sprinkle 1-2 tsp. of coconut aminos in pan and stir. Keeping both in pan, push them aside and add some of your cooked rice in frying pan and fry the rice a bit.
