2 eggs
2/3 C milk
1 t salt
1/4 t pepper
3 slices bread, crumbled
1 T onion, minced
1/4 C shredded carrots
1 C cheddar cheese, shredded
1-1/2 lb. ground chuck

Topping:
1/4 C ketchup
1/4 C brown sugar
1 T yellow mustard

Directions:
Directions:
1. In a large bowl, beat eggs & milk together.

2. Add salt, pepper, & bread. Mix until bread absorbs the liquid.

3. Add onion, carrots, cheese, & ground beef. Blend thoroughly.

4. Shape mixture into a loaf shape. Place in a Pam-sprayed loaf pan.

5. Mix toppings together & spread over top of meatloaf.

6. Bake at 350 degrees for 1 hour.

7. Remove from pan & let rest for 5 minutes before slicing. Enjoy!
