¼ Cup (1/2 stick) unsalted butter
¼ Cup Vegetable oil
3 Cups Onion, chopped
1 Clove Garlic, minced
8 Cups Okra, sliced (tips & tops removed)
7 Cups Tomatoes, chopped
2 Tbsp Parsley, dried
½ Tsp Basil, dried
1 Tsp Paprika, sweet
½ Tsp Black pepper
1 Tsp Salt
½ Each Lemon, juiced
1 Tbsp Sugar
1 Tbsp Worcestershire sauce
3 Tbsp Ketchup

In a large, heavy nonstick skillet, melt butter and sauté onion and garlic until golden brown, about 5 minutes. Remove the onion and garlic with a slotted spoon and set aside. Heat the vegetable oil, add the okra and cook for 10 minutes, stirring often. Add the remaining ingredients (including cooked onion and garlic), cover and simmer for 30 – 40 minutes, stirring occasionally.

Makes 4 servings

Note: This dish tastes best if made a day in advance. Served over rice, it can be a vegetarian entrée or a side dish.
