Ladies of My Round Table

For as long as I can remember, food has been at the center of my family's existence likely because of our Spanish heritage. We gathered around food and every occasion was celebrated with food. As a child, one of the pictures my mom has is of me sitting in the fridge eating. There is nothing better than good food, good friends, family, and laughter. These are the stories of the ladies of my round table. The memories we have created over the years gathered together for a meal at my round table and the love we have shared. Buen provecho!

Gambas al Ajillo (Garlic Shrimp)

Ingredients:
6 tbsp. extra virgin olive oil
4 cloves garlic, sliced
1 lb. small or medium shrimp (shelled or in their shells, depends on your preference)
2 tbsp. lemon juice
2 tbsp. dry sherry
1 tsp. smoked paprika
salt to taste
1 tbsp. minced fresh parsley
Directions:
Heat the oil in a shallow casserole or pan. Add the shrimp and garlic and saute over medium-high heat for a few minutes. Add the lemon juice, sherry, paprika, and salt. Sprinkle with parsley and serve immediately. Enjoy with some alioli sauce and a baguette of bread.
