Mediterranean Bread

90 g black olives, pitted
4 - 5 sprigs fresh rosemary, leaves only
or 4 - 5 sprigs fresh basil, leaves only
fresh red chilli, deseeded
100 g sun-blush tomatoes, drained
310 g strong white bread flour, plus extra for dusting
15 g fresh yeast, crumbled
or 1 tsp dried yeast
10 g sugar
1 medium egg
1 pinch fine sea salt
80 g water, warm
100 g milk
olive oil, for greasing
100 g feta cheese, crumbled
Place olives, rosemary, red chilli and sun- blushed tomatoes and then chop
Add flour, yeast, flour, sugar, egg, salt, water and milk mix leave to rest for 15 minutes
Knead dough for 2 minutes and transfer to a greased bowl and cover until it double in size (approx 3 hours)
Tip onto a well floured surface and knead a few more times. Flatten dough out, and sprinkle crumbled feta and work into the dough
Shape dough into a long loaf and place on a tray and cover with a t-towel
Preheat the oven to 180c. Bake for 50-60 minutes, until golden brown on top
And transfer to a cooling rack
