 Featured Recipe:Crawfish StewBy  Ingredients:1 cup flour
 1 cup cooking oil
 2 lbs. crawfish tails
 2 onions, chopped
 1/2 green bell pepper, chopped
 2 tablespoons minced garlic
 TCS to taste
 1 can Rotel
 4 cups seafood stock or chicken stock
 4 small potatoes, peeled and cubed
 Directions:
 Make roux with flour and oil. (roux recipe)
 Add onions, bell pepper, garlic, TCS and saute' until onions are tender.
 Add Rotel, potatoes, stock and simmer for about an hour.
 Add crawfish and simmer for another 30 minutes.
