Peel large cucumbers (1 gal. rings or sticks). Remove seeds; cut into rings or sticks. Soak overnight in 2 cups lime and 8 1/2 quarts of water. Drain. Wash in cold water (ice). Let set in cold water 3 hours. Drain real good. Simmer 2 hours in 1 cup vinegar, 1 tbsp. alum, 1 or 2 bottles of red food color and water to cover. Drain. Throw away all liquid. Make syrup of 2 cups vinegar, 2 cups water, 10 cups sugar, 4 drops cinnamon oil, 1 pkg. red hots (optional); pour over sticks. Bring to boil; let stand overnight. Next day drain off syrup and add 1 cup sugar and cinnamon oil to taste if desired. Do this 3 days. Drain.

Pack in hot jars. Bring syrup to a boil. Pour over cucumbers and seal.
