This batter can be used to coat whole okra, sliced onions, squash, eggplant and green tomatoes.
1 cup water
1 cup flour
1/4 cup oil
1 egg
1/2 tsp. salt
4 tbsp. cornstarch
1 tbsp. baking powder

Directions:
Directions:
Beat all the ingredients together by hand until well blended. Prepare the vegetables to dip. Dip the vegetables in flour before dipping into the batter. Fry in oil preheated to 375º. Cook until brown; salt lightly.
