“Another recipe I found when I was a young married woman, and it’s been a hit for company over the years!”


3 onions sliced
2 4 oz. cans mushrooms (drained)
¼ lb. butter
1 can consommé
1 cup water
1 cup raw rice
Salt and pepper

Directions:
Directions:

Saute onions and sliced mushrooms in butter. Add consommé and water. Add rice and stir and season.

Bake in greased casserole.

Cover in moderate oven at 350 degrees.

I found this recipe in Betty Crocker's Nice and Easy Cookbook. I made this for Rick and our friends and it was a hit. Later, when we moved to Nashville, I made it for the Gomez's and Kitty has used it with chicken broth and as a base for other one dish meals. You have to like onions and mushrooms, so I don't think my son, Eric, would ever like it!
