3 lbs pork
1 Tbs oregano
1/2 Tbs cumin
1-1/2 teaspoon salt (or more to taste)
8 mashed garlic cloves
3 large chopped onions
2 sliced onions (not used in marinade; to be used the following day for sauteing).
3 naranja agrias (sour oranges) or two fresh squeezed oranges, one lemon and two limes).

My secret -- learned from my mom -- is to stab small slits into pork and marinate with the above a day before baking (use your index finger to stuff mashed marinade deep inside slits). Rub remainder of marinade all over pork.
Next day, pre heat oven to 250 F. Cover pork with aluminum foil and place into oven. Cook 1 hour. Remove aluminum foil and increase heat to 325 degrees for 15 minutes. During this time, saute 2 whole sliced onions in 2 teaspoons olive oil till soft. Add over meat. Bake another 15 minutes
