1 broiler or fryer quartered
1 clove garlic
2 tablespoons olive oil
8 small white onions
2 teaspoons salt
˝ teaspoon pepper
1 cup chicken bouillon (approximately 2 cubes to boiling water)
4 medium tomatoes
˝ lb. fresh mushrooms
˝ cup Sauterne wine
1/3 cup flour

Directions:
Directions:
Brown chicken with garlic in hot oil in Dutch oven. Add onions, salt and pepper, chicken stock and tomatoes. Cover and bake 45 minutes at 350 degrees. Add mushrooms and bake 15 minutes longer. Remove chicken and onions, blend wine and flour, and stir into sauce. Stir until thickened and return chicken to sauce. Serve with hot rice.
