2 packages frozen chopped spinach, thawed. 3 lbs. boned chicken breast, one tsp.salt, I can coconut milk, 1 can cream of chicken soup, 1/4 c. Parmesan cheese. Grease a 3-qt. baking dish. Drain spinach, squeeze thoroughlyand spread evenly in prepared dish. Arrange chicken pieces on spinach. Combine coconut milk and chicken soup and pour over all,spreading evenly. Sprinkle cheese on top and bake, uncovered in 350 oven for one and a quarter hours.
