1 pkg frozen chopped spinach
1 cup of cooked rice
1 cup of milk
2 eggs beaten
1 cup sharp cheese shredded
1 tsp chopped onion
1 ½ tsp salt
(I added 1 tsp chopped garlic)

Directions:
Directions:
Cook spinach until tender and thoroughly drain. Combine eggs, milk, cheese and rice. Stir in onion, salt, pepper and spinach. Pour in casserole dish. Top with additional cheese. Bake 350 for 25-30 minutes. May be frozen.
