Ingredients: 2 cans cream of chicken soup 1/2 package taco seasoning (or seasoning to taste) 1/2 can Ro*Tel tomatoes 1/2 small can corn or mexicorn 1 can cooked canned chicken breast (or cut up grilled chicken breast) 1/2 cup taco or enchilada sauce to taste water shredded cheese tortillas

Directions:Empty the cans of soup into a saucepan on the stovetop. Fill cans with water and pour into pan. Add other ingredients, except cheese and tortillas. Stir until taco seasoning is not clumpy and mixed into soup. Tear chicken into smaller pieces and add to soup. Simmer for about 20 minutes on stove top or put in a slow cooker and cook on low for several hours until ready to eat. (Stirring occasionally). Cut tortillas up into strips, spray with non-stick cooking spray, any seasoning you want, and bake till crispy. Top bowl of soup with crunchy tortilla strips and shredded cheese.

Notes: Rice or ½ can of rinsed black or white beans is also a good addition. If you like it spicy, try HOT Ro*Tel and HOT taco seasoning. It's is also good with 1 can of chicken soup and 1 can of Spicy Cheese Soup. For Healthier options, use low sodium soups and seasonings and brown rice. Wheat tortillas and low fat cheese are also healthy options.
