4 lb. ground beef (fatty; lean won't work well)
1/2 C curing salt (Morton's Tender Quick)
2 Tbl. liquid smoke
1 1/2 tsp. garlic powder
1 1/2 tsp. ground pepper

Directions:
Directions:
Mix thoroughly by kneading with hands. (Use gloves to avoid skin absorbing strong scent.) Cover tightly and refrigerate for 24 hours. Divide mixture into 8 parts and shape into logs approximately 2 inches in diameter. Place on broiler rack in oven and bake at 225º for 4 hours. Remove and pat excess fat with paper towel. Cool. Wrap in foil and refrigerate or freeze.

Very tasty and good for when bulk ground beef is on sale. Keeps in fridge for a couple of months. Perfect snack with crackers and sliced cheeses. Experiment by adding other seasonings to the beef mixture.
