1 lb pitted dates
2 C hot water

2 C sugar (brn or wht)
1 tsp baking soda
1 tsp salt
2 tsp baking powder

3 eggs
1/2 lb chopped nuts
4 C flour
2 tsp vanilla

Directions:
Directions:
Blend the dates and hot water in blender. Cool. Mix in separate bowl the sugar, soda, salt, and baking powder then add the date mixture. Then add the remaining ingredients together and mix well. Drop 2/3 full into greased muffin tins. Bake at 350º for 15 - 20 minutes.

These were definitely a favorite growing up. Mom would cook them barely so that they were slightly doughy in the middle. We could down 4-5 of them easily on the way to school or skiing. Great with slice of butter.
