2 c uncooked elbow macaroni
1/4 c butter
1 small onion, chopped (about 1/4 c)
1/2 tsp salt
1/4 tsp pepper
1/4 c all-purpose flour
1 3/4 c milk
3 oz each (total 9 oz) of Sharp cheddar, processed American (white or yellow), and swiss cheese, cut into 1/2 in cubes

Cook macaroni according to package directions. Set aside. Cook and stir margarine, onions, salt and pepper over medium heat until onion is slightly tender. Blend in flour. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Slowly, stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Sitr in cheese until melted. Place macaroni in ungreased 2 qt casserole. Stir cheese sauce into macaroni. Cook uncovered in 375º oven for 30 minutes.
