Ingredients: 1 head of lettuce 1 small red onion 1 10 oz pkg of frozen peas 2 cups of mayonnaise (not Miracle Whip) 3 Tbsp sugar 8 oz shredded cheese 1 jar bacon bits

Directions: |
Directions:Chop up the lettuce and put it in a glass bowl. Cut onion in half and slice the halves into thin slices. Separate the pieces. Sprinkle the onions over the lettuce. Sprinkle the frozen peas over the onions. Spread the mayonnaise over the peas. Cover the entire layer like icing on a cake. Sprinkle the sugar over the mayonnaise. Sprinkle the cheese over the mayo and sugar.. Sprinkle the bacon bits over the cheese. Cover with clear wrap and refrigerate. This can be made 2 - 24 hours ahead of time. It needs at least a couple of hours for the peas to thaw and the sugar to melt into the mayo. |

Notes: This recipe looks nice in a glass bowl. You can use any kind of lettuce. A mixture of leaf lettuce and spinach is good. I sometimes use sliced green onions instead of the red onion. This recipe was given to me by a friend, Trish Rehm, when we first moved to Crawfordsville.
