1 can Pirouette cookies; divided
1/2 cup graham cracker crumbs
1/4 cup butter; melted
2 (8oz) packages cream cheese; softened
2 cups cold egg nog
2 cups cold milk
2 packages (3.4 oz) instant vanilla pudding
1/2 tsp. rum extract
1/8 tsp. ground nutmeg
1 cup heavy whipping cream

Cut about 20 cookies into 2 inch sections; set aside. Crush remaining cookies. In small bowl add crushed cookies, graham cracker crumbs, and butter. Press into bottom of 9 inch spring form pan.
In large mixing bowl; beat the cream cheese until smooth. Beat in eggnog, milk, pudding, extract and nutmeg until smooth. Fold in whipped cream. Spoon over crust. Cover and refrigerate for 4 hours or overnight.
Just before servings remove sides of pan and arrange reserved cookies around dessert and press gently into sides.
Refrigerate leftovers, makes 12 servings.
