3 C Chicken broth
2 C peeled diced potatoes
1 C diced carrots
1 C diced celery
1/2 C chopped onion
1-1/2 tsp. salt
1/4 tsp pepper
1/4 C butter
1/3 C flour
2 C milk
2 C. shredded cheddar cheese
2 C cooked diced chicken

In a 4 qt. pan bring chicken broth to boil. Reduce heat & add potatoes, carrots, celery, onion, salt & pepper. Cover & simmer for 15 minutes or until veggies are tender. Meanwhile melt the butter in a suacepan; add flour and mix well. Gradually stir in milk. Cook over low heat until slightly thickened. Stir in cheese and heat until melted. Add this to the broth along with the chopped chicken. Cook & stir over low heat until heat through.
