1 lb. fresh Brussels sprouts
2 tsp olive oil
1/2 small onion, halved and thinly sliced
1 tsp. grated lemon peel
2 tsp. fresh lemon juice
1/4 tsp pepper
1/8 tsp salt (optional)

Directions:
Trim outer leaves & ends from Brussels sprouts and cut a small "x" in the bottom. set aside.
Combine oil and onion in microwave-safe 1 qt. casserole; toss to coat onions. Microwave, covered, 1 minute. Add Brussels sprouts and 3 T. water. Cover and microwave on High 6-9 minutes or until sprouts are crisp tender, stirring once. Add lemon peel, lemon juice, pepper, and salt. Toss to coat. ©
