8-10 red potatoes in jackets
1 lb. box Velveeta
1/2 c. chopped pimento (optional)
1/2 c. chopped onion
6 slices of bread with crusts (cubed)
2 T. fresh parsley of 1 T. dried
1 tsp. garlic salt
2 sticks margarine

Directions:
Directions:
Boil potatoes until done. Cube potatoes, but do not peel. Place cubes in a 13 X 9 inch casserole dish and sprinkle all other ingredients, except bread cubes, over potatoes and mix well. Melt margarine. Put bread cubes on top. Pour margarine over bread cubes.
Bake uncovered 15-20 minutes at 350º until casserole is bubbly and cubes are browned.
