Ingredients: 4 flour tortillas (8 inches) spray butter taco seasoning packet, divided (1 tsp set aside) 1.25 lb ground turkey 1 cup match stick cut carrots 1 cup salsa, divided 2 tbsp light mayonnaise 4 cups torn salad greens 1 large tomato, chopped 1/2 cup sliced black olives 1/2 cup reduced fat mexican style shredded cheese 1/4 cup fresh chopped cilantro 1/4 cup sour cream

Directions:Preheat oven to 425 degrees. Crumple four large sheets of aluminum foil to make four 3" balls. Place on baking sheet. Spray each tortilla with spray butter and sprinkle with 1 tsp taco seasoning. Place tortilla over a foil ball. Bake 6-7 minutes until they are golden brown. They will drape over balls as they bake.
Brown the ground turkey in a nonstick skillet. Add 1/2 cup water, carrots and remaining taco seasoning. Let simmer; stir occasionally. Add 2/3 cup of salsa. Cook until heated through.
Mix mayo with remaining 1/3 cup salsa. In a large bowl toss the salad greens, tomato, black olives and salsa/mayo mixture. Spoon into tortilla shells, top with meat mixture, cheese and cilantro. |
