1 tsp. vanilla extract
1 pinch salt
1 c. semisweet chocolate chips
1/4 c. white sugar

Directions:
Preheat oven to 325°.

Beat egg whites with the salt until foamy. Slowly add sugar, one tablespoon at a time, beating after each addition until the meringue stands in stiff peaks. Stir in vanilla and fold in chocolate chips. Drop by teaspoonful on a lined baking sheet and place in a preheated oven. After 2 minutes, turn off oven. Leave meringues in oven overnight. Remove from pan and store in air tight container.

These do not do well during the humid months.
