2 tbsp. olive oil
2 cup chopped onion
2 cups chopped bell pepper
1 cup parsley, chopped
1 cup green onion, chopped
3-4 cloves chopped & smashed garlic

1 tsp. dried mint
1 cup dry white wine
2 cups chicken stock
4 cups diced fresh tomatoes
2 tbsp. low salt soy sauce
1 tsp. (or less) salt
1 boiled and picked medium chicken
Louisiana hot sauce, to taste

Directions:
Directions:
Saute first 6 ingredients until tender & onions are transparent .... don't burn the garlic.

Add mint, wine, stock, tomatoes, soy sauce, salt and chicken. Let simmer for a while.

Add hot sauce to taste. Serve over rice, with biscuits
