Katie's Horseradish Carrots Recipe

Ingredients:  
1 lb carrots, julienned
2 TBSP grated onion
2 TBSP horseradish
1/2 c. mayonnaise
1/2 c. water from cooked carrots
1/2 tsp. salt and 1/4 tsp. pepper

Topping:
1/4 c. breadcrumbs
1 TBSP butter or margarine, melted
Paprika
Chopped fresh parsley

Directions:
Directions:
Preheat oven to 375º

Steam carrots until crisp. Save 1/2 c. water.
Combine remaining ingredients, except carrots and topping ingredients, in saucepan and heat through.
Place carrots in casserole and pour sauce over.
Top with breadcrumbs, melted butter, parsley and paprika. Bake for 15 minutes or until bubbly.

Back in the Dark Ages, when I was a Travel Agent, I got this recipe over the phone from an Eastern Airlines reservations agent named Katie! Gib loved Horseradish and I thought this sounded good. It is!
