1 fresh pineapple, peeled & placed in juice
1 T. olive oil
1 (14.8 oz.) pouch cooked long grain rice
12 oz. cooked ham, coarsely chopped
1 cup chopped sweet peppers
1 jalapeņo pepper, sliced
3/4 cup canned black beans, rinsed & drained (1/2 of 15 oz. can)

Cut pineapple in 3/4 in. slices. Heat oil in a skillet over medium-high heat; add pineapple slices. cook 3 to 4 minutes or until pineapple begins to brown. Divide pineapple among 4 plates.
Meanwhile, prepare rice according to pkg. directions. Add ham and peppers to skillet; cook 3 minutes, stirring occasionally. Add rice and beans and stir for 3 minutes, until heated through. Add juice from pineapple. Serve with lime wedges
