2 T. unsalted butter
2 T. grated fresh ginger
1/2 c. dark brown sugar
1 c. orange juice
16 oz. fresh or frozen cranberries
1/2 to 3/4 c. orange marmalade
1/2 t. black pepper
2 T. minced fresh cilantro (optional)

Directions:
Directions:
In saucepan over medium heat, melt butter. Add ginger and cook, stirring 2 minutes. Add sugar, orange juice and cranberries. Cook until cranberries burst and sauce thickens, about 15 minutes. Stir in marmalade to taste (depending on desired sweetness). Turn off heat. Stir in pepper and cilantro before serving. Serve warm or at room temperature. To make ahead, prepare relish up to 5 days in advance, omitting pepper and cilantro. Cover and refrigerate. Warm to room temperature, then stir in pepper and cilantro before serving.
