1 T. butter
4 lbs. russet potatoes
1 c. whole milk
1/2 c. butter, melted
1 1/2 c. grated mozzarella
1 c. freshly grated Parmesan
salt, freshly ground black pepper
2 T. plain dry bread crumbs

Directions:
Directions:
Preheat oven to 400º. Coat 13x9 dish with butter; set aside. Peel and cut potatoes into 1-inch pieces; cook in large pot of boiling salted water until tender, 15 minutes. Drain; return potatoes to same pot; mash well. Mix in milk and melted butter. Mix in mozzarella and 3/4 cup of Parmesan. Season with salt and pepper. Transfer potatoes to prepared baking dish. Stir bread crumbs and remaining Parmesan in a small bowl to blend. Sprinkle bread crumb mixture over mashed potatoes. Recipe can be prepared up to this point 6 hours ahead of time; cover and chill. Bake, uncovered, until topping is golden brown, 20 minutes.
