10 81/2 oz cans sliced peaches, drained
2 sticks butter, unsalted, divided, 1 stick cut into small pieces
1 cup sugar, plus 1/4 cup
1/2 tsp ground cinnamon
1/8 tsp grated nutmeg
1/2 cup plain bread crumbs
2 homemade or store bought pie crusts
1/4 cup all purpose flour
Canola oil spray

1 pint vanilla ice cream

Preheat oven to 350 degrees.

In large saucepan. add peaches, 1 stick butter, 1 cup sugar, cinnamon and nutmeg and bring to a simmer. Add bread crumbs and stir. Prepare pie crusts. Use 1 for top of cobble and 1 for bottom.

Spray a 10 inch square pan with canola oil and place 1 crust in the pan. Place a few chips of butter, as well as a dusting of the remaining sugar on bottom crust. Pour peach mixture into the pan. Cut the top crust into strips or use decorative cutters to form a lattice. Top with 3-4 chips of butter and bake for 25-30 minutes or until the crust is brown and the peaches are bubbling.

Serve with warm vanilla ice cream

Like Aretha, this cobbler has a lot of character. If you prefer a jucier cobbler, reduce the amount of bread crumbs to 1/4 cup.
