1 boneless, skinless chicken breast half
1/4 c. sauce (BBQ, salsa, spaghetti sauce, gravy, Alfredo, etc.)
1/2 c. vegetables (broccoli, zucchini, corn, peas, mixed vege., etc
As desired: chopped green pepper, onion, ripe olives, etc
1/4 c. shredded cheese (mozzarella, cheddar, Parmesan, American, Swiss, etc.

Spray a 12" x 18" sheet of heavy duty foil with cooking spray. Place chicken breast in center and top with sauce, vegetables and cheese. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Bake 20-24 minutes on a cookie sheet in a 450 degree F oven or on a med-high heat, covered outdoor grill.

This makes a nutritious, low-fat poultry/vegetable entree. Students like that they can personalize their own packet. We have had some great combinations. You can make, bake, and eat these in one class period. Clean-up is minimal. I make these at home for my family, too.
