1 c. sugar
½ tsp. salt
1 envelope unflavored gelatin
1 ¼ c. milk
1 tsp. vanilla
1 c. flaked coconut
2 c. cream, whipped

Crimson Raspberry Sauce:
1 (10 oz) pkg frozen raspberries
1 ½ tsp. cornstarch
½ c. red currant jelly

Directions:
Directions:
Pudding: Thoroughly mix sugar, gelatin, and salt. Add milk, stir over medium heat until gelatin and sugar are dissolved. Chill until partially set. Add vanilla, fold in coconut and whipped cream. Spoon into serving bowl. Chill until firm, 4-5 hours or overnight.

Sauce: Thaw and crush raspberries, mix with cornstarch and jelly. Bring to a boil, cook and stir until mixture is clear and slightly thickened. Strain and chill.

Pour sauce over individual servings of pudding.
