2 tsp. baking powder
½ tsp baking soda
½ tsp salt
2 Tbs sugar
½ c butter
1 c. cinnamon chips
1 egg
1 tsp vanilla
¾ buttermilk
cinnamon sugar

Directions:
Preheat oven to 375º. Combine flour, baking powder, baking soda, salt and sugar in mixing bowl. Cut butter into ¼”-1/2” pieces. Cut butter into flour mixture. In a separate bowl, combine egg, vanilla and buttermilk. Add to dry ingredients, mix together—but no more than 10-12 strokes. Stir in cinnamon chips. On floured surface, flour hands and knead lightly 2-3 times until flour is incorporated. Roll out dough (with hands only) to 1/2 “ thickness. Cut into 8 scones using a bench scraper or table knife. Place on ungreased cookie sheet. You can freeze these on the pan for 10 minutes, then break them apart and store in a freezer bag to bake later. When ready to bake, place scones 1 inch apart on an ungreased baking pan. Brush with an egg wash, milk or cream. Sprinkle with cinnamon sugar. Bake for 18 minutes (if thawed) or 23 minutes (if frozen). Cool scones for 5 minutes before moving to plates.

You can use chocolate chips as well. Omit the cinnamon when sprinkling sugar before baking. We also drizzle white canned frosting over these before serving.
