1 5-7 lb roasting chicken
salt and fresh ground pepper
1 large garlic clove, crushed
1 tsp cumin
2 tsp coriander
1 tsp ginger
1tsp cinnamon
1/2 tsp turmeric
4 Tbs butter

Directions:
Directions:
Season roaster inside and out with salt and pepper. Place garlic clove in cavity. Combine butter and spices in a small saucepan and heat until butter is melted. Spoon half of the mixture inside the roaster. Baste with remaining mixture and roast at 350ºF 1 3/4 to 2 1/2 hours depending on size of bird. Baste twice during cooking time with pan juices. Let rest 10 to 15 minutes before carving.
