1 cup cold butter
4 cups flour
2 cups vanilla ice cream, softened
1 can (12 1/2 oz) cherry pie filling
Sugar, optional

Directions:
Directions:
In a large bowl, cut butter into flour until mixture resembles coarse crumbs. (I use my food processor) Stir in ice cream. Divide into four portions, cover and refrigerate for 2 hours.
On a lightly floured surface, roll each portion to 1/8 inch thickness. With a fluted pastry cutter, cut into 2" squares. Place about 1/2 teaspoonful cherry pie filling in the center of each square. Overlap two of the opposite corners of the dough over the filling and seal. If desired sprinkle lightly with decorators sugar. Place on an ungreased baking sheet and bake at 350ºF for 10-12 minutes or until the bottoms are light brown. Cool on wire racks.. Makes about 5 dozen.
