24 new red potatoes, halved
2 tsp. olive oil
1 c. crumbled blue cheese
1/4 red onion, diced
1/2 c. crumbled cooked bacon
1/3 c. chopped flat-leaf parsley


Extra parsley for garnish

Directions:
Directions:
Preheat oven to 400 degrees. In med. bowl toss the potatoes with olive oil. Place cut side down on baking sheet and baked until skins are crisp, 20 to 25 min. Cool. Scoop out center of each potato half and place in medium bowl. Stir in sour cream, blue cheese, bacon, parsley and onion. Fill each potato skin with mixture and top with the extra crumbled bacon and parsley. Serve at room temp.
