1/3 c. olive oil
1/4 c. orange juice
3 T. red wine vinegar
1 garlic clove, minced
1 T. fresh parsley, minced
1/4 t. salt
dash pepper
8 c. spinach or mixed greens
3 medium oranges, peeled and sliced
1 c. red onion, sliced

Directions:
Directions:
Mix together first 7 ingredients for dressing and let flavors blend for about 30 minutes. Toss greens, oranges, and onions with dressing. Serve immediately.

Personal Notes:
I like to marinate the oranges and onions in the dressing. The oranges add flavor to the dressing and vice versa. If you want to do this, mix the dressing and then marinate the oranges and onions for 30 minutes, then pour over the greens and toss well. I also like to use a lot of oranges.
