1/2 C butter
1/2 C sugar
2 T hotwater
1 egg
1 C flour
1/4 C crushed pineapple juice and pulp

Directions:
Directions:
Cream butter sugar until fluffy add beaten egg. Sift flour and soda add alternately with pineapple. Stir in hot water. Beat repidly until smooth. Drop not to close to each other. If pineapple is too juicy drain off some juice or use only half of hot water.
Bake 375º for 10 minutes

This recipe came out of Mom's (Irene) recipe file. It is written in Grandma Winnie Mercer's hand writing. We do not know of a Aunt Susan. So it could of been a recipe of someone's Aunt that Grandma Winnie knew. Or it could just be the name of the recipe. Don't think we'll ever know the story on this one. Other than Aunt Susan is a mystery and there is no Aunt Susan in our family.
